Master’s Projects

A few, dedicated Master’s students have chosen to complete a Master’s Project during their time while earning their degree. They have used the experience and knowledge gained from the Dietetics and Nutrition program to foster their individual research projects. Here, we would like to highlight a few of our students who’ve successfully completed their Project.

 

Nicole Vitale

Title: The effects of taste testing with nutrition education on knowledge, intake and food preferences of preschool/kindergarten children (4-6 years) in a Broward county Montessori school.

Objective: The objective of this study is to assess the effects of taste testing with nutrition education on nutrition knowledge, intake and fruit and vegetable preferences in early childhood using a randomized control trial in a Montessori based education environment.

 

Yaisli Lorenzo

Title: Relationship between living conditions, dietary iron intake and BMI among Mexican adolescents.

Objective: The objective of this study is to analyze the association between living conditions on nutritional status based on dietary iron intake levels and body mass index (BMI) among the Mexican adolescent’s population treated at the Mexican Social Security Institute (Instituto Mexicano del Seguro Social, IMSS) in Guadalajara, Mexico. Living conditions such as socio-demographics factors along with potable water availability, air condition, electrical use, indoor sewage, rooms per person and internet access will be observed.

 

Dana Quershy

Title: Community supported agriculture (CSA) members and their characteristics related to dietary behaviors and health outcomes.

The objective of this study is to classify CSA members by stage of change, examine level of orthorexia in CSA members, and determine if stage of change and orthorexia are correlated with participant fruit and vegetable intake.
